HEALTHY LUNCHBOX MUFFINS / THERMOMIX

On the weekend Mum, & I decided to make some muffins. We scanned the Thermomix recipe community website & found these. I thought they would be a healthier alternative to double chocolate muffins or doughnut muffins.

Today I thought I'd share the recipe on my blog, because they tasted REALLY GOOD.

The ingredients you'll need are...

- 2 apples (green or red, it's up to you & what you would prefer.)
- 1 zucchini 
- 2 eggs
- 90 grams vegetable oil
- 1 tsp vanilla extract
- 250 grams self raising flour
- 80 grams brown sugar
- 1 tsp cinnamon 

Method:

1. Preheat your fan forced oven to 160 degrees.

2. Place 12 cupcake cases into your muffin tin.

3. Peel & core the 2 apples & cut them into quarters. Peel the zucchini as well & chop it up roughly.

4. Add the apple & zucchini to the TM bowl & put on speed 7 for 3 seconds.

5. Scrape down the sides of the bowl & then repeat the previous step.

6. Then add the wet ingredients (eggs, oil & vanilla extract) & mix for 10 seconds on speed 4.

7. Add the dry ingredients (flour, sugar & cinnamon), then mix on speed three for 6 seconds.

8. Spoon the mixture evenly into the cupcake cases & cook for around 20 minutes.

9. Let them cool & then enjoy your muffins!
